Heat oven to 325F
Sift together flour, sugar, baking soda, salt and cocoa powder.
Combine remaining cake ingredients in the bowl of an electric mixer, and beat on medium speed until well incorporated.
Add dry ingredients - slowly! - to bowl, until fully combined. Pour into 2 9"round cake pans greased with vegetable oil. Bake in oven for 20-30 minutes until cake pulls away from pan. Cool for about 20 minutes.
Make frosting meanwhile. Combine cream cheese and butter with an electric mixer set on medium. Slowly add confectioners subgar until frosting is at desired sweetness and smoothness. Add vanilla.
Cut layers in half making 4 layers. Frost l layer and add another until all layers are added, then frost top and sides. Garnish with chopped pecans.
This is my son's favorite cake, for any occasion.

Made esp. for me by my brother who makes the best damn Red Velvet Cake on this side of Dixie. Once the guest found out that he made it, it was gone faster than the wedding cake that my sister made. |
