FIRST Combine marinade ingredients in a zip top plastic bag. Add chops and turn to coat. Marinate at room temperature for 30 minutes.
LAST Preheat grill to medium-high heat. Remove meat from marinade and discard remaining marinade. Oil grill grates and grill lamb for 3-4 minutes on all sides until well browned and internal temperature registers 130°F for medium-rare. Remove from grill and let rest for 10 minutes before slicing.
