Reuben Meatloaf

Ingredients

  • 2 lbs. ground beef
  • 2 c. soft bread crumbs
  • 1 egg, slightly beaten
  • 2 T. catsup
  • 3/4 t. salt
  • 1 (8 oz) can sauerkraut, rinsed and drained
  • 1 c. shredded Swiss cheese, divided
  • 1/4 lb. pastrami, chopped
  • 1/4 c. dairy sour cream
  • 1 T. yellow mustard

Cooking Instructions

Preheat oven to 350 degrees.

Combine ground beef, bread crumbs, egg, casup, and salt in bowl, mixing lightly.

Combine saurekraut, 3/4 c. of the Swiss cheese, pastrami, sour cream, and mustard.

Pat out 1/3 of the meat mixture to form an oval 9" long on oven-proof platter or baking dish.

Then spread with 1/2 of the sauerkraut mixture.

Repeat for 2nd layer.

Top with remaining 1/3 of meat mixture.

Bake 350, loosely covered with foil tent, for 60 min.

Remove foil, sprinkle with remaining cheese, and bake 5 min. more.

Allow to sit about 5 min.

Slice and serve!

Recipe Notes

Makes an interesting sandwich. Serve ;on rye bread with thousand island dressing.
