Ingredients

  • 1 pound medium asparagus, root ends trimmed
  • 1/2 cup sun-dried tomatoes, roughly chopped
  • 1/2 stick unsalted butter
  • kosher salt and freshly ground black pepper
  • extra virgin olive oil

Cooking Instructions

Preheat oven to 400° F.

Trim root ends of asparagus off and discard. Take a sheet tray and lay asparagus out in a single layer. Drizzle with a little olive oil and season with kosher salt and freshly ground black pepper. Roast in the oven for 10 to 12 minutes until they are tender and the point of a knife easily goes through the thick part of the asparagus.
