Roasted Beet Salad with Goat Cheese Dr..

Ingredients

  • Dressing
  • 4 ounces fresh goat cheese (softened)
  • 1/3 cup low-fat buttermilk
  • zest of 1/2 lemon
  • 1 tablespoon white wine vinegar
  • 4 tablespoons water
  • Salad
  • 4 medium golden beets
  • 4 medium red beets
  • 2 heads Bibb lettuce (coarsely torn)
  • 1/2 cup pistachios

Cooking Instructions

One of my favorite vegetables beets are super sweet and make a delicious salad. I serve this for dinner parties on a large platter family style and everyone loves it! Georgia’s own Sweet Grass Dairy has award-winning goat cheeses that always make this dish even more spectacular.

FIRST Preheat oven to 350 degrees F. Trim greens from beets; cut off and discard stems. Wrap each beet individually in foil place on baking sheet and bake for 45 minutes to 1 hour (depending on size of beet) until fork tender. Set aside to cool.

NEXT To make dressing place cheese in a small bowl and mash with back of fork. Add buttermilk zest and vinegar and mix well. Slowly whisk in enough water to reach the consistency of a thick dressing. Season with salt and pepper to taste.

LAST Peel beets and cut into 1/4-inch slices. On a large platter arrange lettuce leaves top with sliced beets and pistachios. Spoon dressing on top and garnish with freshly ground black pepper.
