Roasted Pears with Chestnut Honey and ..

Ingredients

  • 4 large pears, bosc or anjou, not quite ripe
  • 1 cup Chianti or other dry red wine
  • 1 cup sugar
  • 1/4 cup chestnut or orange blossom honey
  • 8 oz pecorino toscano

Cooking Instructions

Preheat the oven to 400 F.

Trim the bottoms of the pears so they'll stand up. Arrange them upright in a small baking dish just large enough to hold them. Pour the wine and sugar into the pan around the pears. Place in the oven and cook until soft, about 40 minutes. Remove and allow to cool. Strain the liquid in the bottom of the pan and set aside.

To serve, place each pear in the center of a dessert plate. Drizzle with chestnut honey and spoon the wine sauce around the base of each. Using a peeler, shave pieces of pecorino over the pears and serve.
