Prepare all of the vegetables and place in one or two large, shallow bowls. Set aside.
To make the marinade: In a large bowl, mix together all of the marinade ingredients. Pour the marinade over the reserved vegetables and marinate for at least 30 minutes, preferably 1 - 2 hours.
Preheat oven to 375F. Drain the vegetables and place on one or two large baking sheets. Roast in the oven for 10 - 15 minutes, turning once.
For faster results, place under the broiler and broil for 3 minutes per side. On an outdoor grill, grill for 3 - 5 minutes per side. Serve immediately.
