Root Vegetable Soup

Ingredients

  • 2 cups chopped onions
  • 2 TBS chopped garlic
  • 2 cups rutabega, peeled and chopped
  • 2 cups parsnips, peeled and chopped
  • 2 cups sweet potato, peeled and chopped
  • 2 cups white potato, peeled and chopped
  • 2 cups carrots, peeled and chopped
  • 2 TBS salt
  • 2 quarts chicken or vegetable stock
  • 1/4 TBS pepper
  • 1/4 TBS nutmeg
  • 1/2 cup sheery or white wine
  • 2 cups half and half or soy milk
  • 1/4 cup canola oil

Cooking Instructions

saute onion in canola oil until soft

add garlic to pan and saute a few more minutes

add remaining vegetables and stock to pan and bring to a boil

simmer for 20 to 30 minutes or until vegetables are soft

puree soup with an immersion blender

add half and half or soy milk until soup is desired consistency

adjust seasonings
