Rotelle with Chicken Bolognese Sauce

Ingredients

  • 1 lb rotelle (spirals or twists)
  • 1 lb ground chicken
  • 1 Tbsp ground chicken
  • 1 Tbsp bottled chopped garlic in oil
  • 1 tsp dried rosemary, crushed
  • 2 cups bottled marinara sauce
  • 1 can (14 1/2 oz) diced tomatoes in juice
  • 1 can (7 1/2 oz) caponata (eggplant appetizer)

Cooking Instructions

Cook pasta.

Meanwhile place a large, deep nonstick skillet over high heat. Add chicken, garlic and rosemary and cook, breaking up clumps of chicken with a wooden spoon, 5 minutes or until chicken is no longer pink.

Stir in remaining ingredients and cook 2 minutes or until hot. Drain pasta, return to pot and add sauce. Toss to mix.
