Rum Cake

Ingredients

  • 1 Cup chopped or ground pecans
  • 1 ( 8 /2 oz) pkg. Yellow cake mix with pudding already in the mix.
  • 3 eggs
  • 1/2 Cup cold water
  • 1/3 Cup liquid cooking oil
  • 1/2 Cup Bacardi Superior Rum
  • Glaze
  • 1/4 lb butter
  • 1/4 Cup water
  • 1 Cup granulated sugar
  • 1/2 Cup Bacardi Superior Rum

Cooking Instructions

Preheat oven to 325. Grease and flour Bundt pan. Sprinkle nuts over bottom of pan. Mix all cake ingredients together using mixer for 2 minutes. Pour batter over nuts. Bake hour. Cool. Invert on serving plate. top. Spoon and brush glaze evenly over top and sides. Allow cake to absorb glaze. Repeat till glaze is used up. For Glaze: Melt butter in saucepan. Stir in water sugar and rum. Boil 5 minutes stirring constantly. Remove from heat. Drizzle over cake.

Recipe Notes

* I cooked the Bacardi cake as according to Bacardi’s direction and it was much too strong, so I changed it up a little bit and this is how I cook it. Much better and well loved by everyone.
