For each serving, take a generous handful of alfalfa sprouts and gently form the sprouts into a nestlike shape.
Fill each nest with about 1 tbsp green onions or scallions. Top onions with several almonds (these look charmingly egglike).
Drizzle nests with Ume Plum Dressing.
