Sausage & Spinach Soup

Ingredients

  • vegetable cooking spray
  • 1/2 lb. sweet Italian pork sausage , cut into 3/4-inch pieces
  • 4 cups Swanson® Chicken Broth (Regular, Natural Goodness™ or Certified Organic)
  • 1/2 tsp. dried oregano leaves , crushed
  • 1 medium onion , chopped (about 1/2 cup)
  • 1 medium carrot , sliced (about 1/2 cup)
  • 2 cups coarsely chopped fresh spinach leaves

Cooking Instructions

Spray a 2-quart saucepan with the cooking spray and heat over medium-high heat for 1 minute. Add the sausage and cook until it's well browned, stirring often. Pour off any fat.

Stir the broth, oregano, onion and carrot into the saucepan. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the sausage is cooked through.

Stir the spinach into the saucepan and cook for 1 minute.
