Sausage Cake

Ingredients

  • 1 pound loose unseasoned pork sausage
  • 1& cups sugar
  • 1& cups firmly packed brown sugar
  • 2 eggs well beaten
  • 3 cups flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup strong cold coffee
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 cup boiling hot water

Cooking Instructions

Pour boiling water over raisins. soak 5 minutes; drain well; set aside.

Take one cup cold strong coffee; add baking soda; set aside.

Sift flour with ginger pumpkin pie spice & baking powder; set aside.

Grease & flour bundt or angel food pan.

In mixing bowl combine sausage with brown sugar & sugar. Mix well.

Add eggs. Mix.

Add flour mixture & coffee alternately. Mix after each add.

Fold in raisins & walnuts.

Pour into pan.

Bake at 350 degrees for 1 &1/2 hours until done.

Cool in pan 15 minutes.

Dust top with powdered sugar or drizzle powdered sugar icing over cake.

Powdered Sugar Icing 1 cup powdered sugar 1/4 teaspoon vanilla 1 tablespoon milk or orange juice Milk In a small bowl combine powdered sugar vanilla (or OJ) & 1 tablespoon milk. Stir in additional milk 1 teaspoon at a time until icing reaches drizzling consistency. This makes enough to drizzle over one 10-inch bundt or angel food cake.

Sausage in a cake sounds strange, but everyone I serve this cake to enjoys it, and asks for the recipe.
