Melt the butter in a heavy skillet with the oil. When it is bubbling, add the mushrooms and saute over medium high heat 6 to 8 minutes. Shake the pan several times, and if necessary reduce the heat slightly. When the mushrooms seem to have absorbed every bit of fat in the pan, shake again vigorously. They will begin to brown delicately and are almost ready for service. Salt and pepper to taste, and place in a heated serving dish or spoon onto pieces of fried toast.
