Heat a large sauté pan over moderate heat. Add oil and pan-sear shrimp for 1 minute on each side. Remove shrimp from pan. Add butter and garlic to pan and cook until garlic is softened and golden. Add lime juice, parsley and shrimp. Season with salt and pepper and serve immediately.
Round Out the Meal:
With purchased tamales or soft corn tortillas and steamed greens to complement garlicky butter sauce.
Healthy Hint:
Substitute olive oil for butter.
Kid Friendly:
Limit or omit garlic.
