Savory Cheese Straws

Ingredients

  • 1 lb frozen puff pastry, defrosted
  • 2 egg whites, lightly beaten with 4 tsp water
  • 2 cups plus 2 tbsp freshly grated Parmesan or Romano
  • 1/2 cup finely chopped fresh herbs (chives, dill, rosemary or sage)

Cooking Instructions

1. Preheat the oven to 400. Line the bottom of a 12 x 16-inch baking sheet with the parchment paper, leaving 1 inch of the pan exposed on both long sides.

2. Cut each sheet of pastry dough in half (there are two sheets per package), and keep the dough chilled until you are ready to work with it. On a lightly floured surface, roll the dough into a 10 x 12-inch rectangle about 1/16 inch thick.

3. Brush the dough lightly with the egg wash. Sprinkle the surface with 1/2 cup of cheese and 2 tablespoons of herbs. Using a rolling pin, lightly press the cheese and herbs into the dough. Fold the dough in half to enclose the cheese, forming a 6 x 10-inch rectangle. Brush with egg wash and sprinkle with 1-1/2 teaspoons of cheese. Turn the dough over and repeat.

4. With a long sharp knife, using a ruler as a guide if necessary, slice the folded dough into 1/2 x 6-inch strips. Carefully unfold each strip and place on the parchment paper, pressing the ends down onto the exposed edge of the baking sheet, to prevent the cheese straws from curling while baking. Place in the freezer and repeat with the remaining pastry.

5. When all are prepared, place in the oven and bake for 10 minutes, until puffed and golden brown. Store in an airtight container.
