Mix together spices. Preheat oven to 350 degrees. Lift skin on thighs away from meat but do not remove. Divide seasoning mixture between both thighs and massage into meat under skin and on other surfaces. Place skin side down in baking dish. Do not cover. Bake for 30 minutes, remove and turn over. Add wine to pan. Continue cooking for remaining 40-45 minutes. Spoon pan juices over meat as it cooks. Remove thighs from pan and let sit for 10 minutes before slicing.

Adjust the seasonings according to your own personal tastes, and serve with your favorite mashed potatos! I smashed up some baby red potatos, added a little heart-healthy margarine and light sour cream, then steamed some fresh green beans.....yum! |
