Ingredients

  • 1 3/4 cups Swanson® Beef Broth (Regular, Lower Sodium or Certified Organic)
  • 2 medium potatoes , cut into cubes
  • 1 cup cubed cooked cooked beef
  • 3 cups V8® 100% Vegetable Juice
  • 1 can (about 8 oz.) whole peeled tomato , cut up
  • 1 bag (16 oz.) frozen mixed vegetables
  • 1/4 tsp. dried thyme leaves , crushed
  • 1/8 tsp. ground black pepper

Cooking Instructions

Place broth and potatoes in saucepan. Heat to a boil. Cover and cook over low heat 5 min. or until potatoes are tender.

Add beef, vegetable juice, tomatoes, vegetables, thyme and black pepper. Cover and cook 15 min. or until vegetables are tender.

GREAT

This is so easy and is wonderful when you are in a hurry to have a great veggie beef soup. You can also mix and match the veggies you like to your taste.
