Ingredients

  • 1 Nonstick olive oil cooking spray
  • 3 tablespoons seasoned dry bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 egg white
  • 1 teaspoon reduced-fat (2%) milk
  • 2 small zucchini (about 4 ounces each), cut lengthwise into quarters
  • 1/3 cup spaghetti sauce, warmed (or Ranch dressing)

Cooking Instructions

Preheat the oven to 400°F. Spray a baking sheet with cooking spray; then set aside.

In a shallow dish combine bread crumbs with Parmesan cheese, then in another shallow dish combine egg white and milk and beat with a fork until well blended.

Take each zucchini wedge and dip into the crumb mixture first, then dip into the egg white and milk mixture and let the excess mixture drip off back into dish, then roll zucchini in crumb mixture again to coat.

Take the prepared zucchini sticks and place them on a baking sheet, cooking spray to coat them well, and bake for 15 to 18 minutes or until they have become golden brown. Serve with spaghetti sauce.
