Scallops and Angel Hair Pasta

Ingredients

  • 1 lb angel hair pasta
  • 1/4 cup olive oil
  • 2 tsp. minced garlic
  • 1 lb bay or sea scallops (cut in half)
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper
  • 1 cup coarsely chopped fresh basil
  • 2 Tbsp. butter
  • 3 Tbsp. pine nuts

Cooking Instructions

1. Bring lg. pot of salted water to a boil, add pasta cook according to pkg. Pour 1/4 cup cooking water into a lg bowl. Drain pasta and add to bowl with water.

2. Prepare sauce while pasta cooks. Heat oil in lg. skillet. Add garlic cook over med-low heat for about 3 min. Stirring often until tender.

3. Stir in scallops, salt and red pepper. Cook over med heat for 4 min. stirring occasionally until scallops are opaque. Stir in basil.

4. Pour over pasta. Add butter and pine nuts. Toss to mix and Serve.
