Cook the beans in salted water as in the basic instructions above. When they are tender, drain and keep them warm. While they are cooking, try out the bacon in a skillet until almost crisp. Add the garlic and just color it slightly. Add the mint, vinegar, salt to taste, and pepper, and let them blend well together. Combine with the hot beans and toss thoroughly. Serve garnished with chopped parsley.
