Ingredients

  • 1 1/2 lbs boneless,skinless chicken thighs, cut into 1/2-inch pieces
  • 1 20 oz pkg refrigerated diced potaoes w/ onions
  • 1 16 oz pkg frozen mixed veggies: broccoli,cauliflower, and carrots
  • 1 small bag frozen Italian green beans
  • 2 14 oz cans lo-sodium chicken broth.
  • 1 3/4 cups water
  • 1 10 & 3/4 can lo-fat,lo-salt condensed cream of chicken soup
  • 1 tbsp fresh thyme leaves crushed

Cooking Instructions

In a 4 1/2 to 6-quart slow cooker combine, chicken, potatoes, frozen veggies, broth, water, soup, and thyme. Cover and cook on low-heat setting for 7 hours or on high-heat setting for 4 hours.

Recipe Notes

This is a quick,easy to make soup. It is best when cooked on the low setting. It is very lo-calorie, lo-fat, lo-cholesterol. But still very yummy. I serve w/ Pillsbury whole wheat rolls for a quick dinner after a long day. CAL: 201 FAT: 3 g CHOL:60
