Preheat oven to 350. In lg. bowl beat eggs on high until thick. Combine sugar and oil. Beat into eggs.Stir together flour cinnamon baking soda. Add to egg mix. Add vanilla. Stir in walnuts. Spread apples in buttered 9x13 pan. Pour batter over apples. Spreading to cover. Bake 1 hr. Cream cheese icing: Beat 2 [3oz] packages cream cheese until fluffy. Beat in 1/4 cup melted butter. stir in 1 and 3/4 cup powdered sugar and 1 tsp lemon juice. Spread over warm cake.
Very full flavor. Reminds me of fall.
