Sherry's baked zucchini wedges

Ingredients

  • 1/2 cup fine breadcrumbs
  • 3 tbsp grated parmesan cheese
  • 1 tsp dried Italian seasonings, w/ no salt. Like Mrs. Dash
  • 1/4 tsp lo-sodium salt
  • 1 tsp ground red pepper
  • 1 tsp garlic powder
  • 3 med zucchini
  • 1/2 cup Eggbeaters
  • 3 tbsp all-purpose flour
  • 1 cup plain marinara sauce, for dipping

Cooking Instructions

Pre heat oven to 400. Combine 1st 6 ingredients in bowl, set aside. Cut each zucchini lenghtwise into 6 wedges. Dip zucchini wedges in egg, dredge in flour. Dip wedges in egg again, dredge in breadcrumb mixture, place wedges in single layer on a baking sheet, sprayed w/ olive oil flavored cooking spray . Bake for 20 min or until golden brown. Serve warm w/marinara sauce.
