Preheat oven to 350. Combine first 5 ingredients in lg bowl, beat w/ a mixer until smooth. Add egg, beat well. Combine leveled off flours, oats,baking soda,salt in med bowl.Stir w/ whisk. Add flour mix to banana mix in bowl. Beat w/ mixer at medium speed until well blended. Stir in chcocolate chips [and nuts, if used.] Lay down parchment paper onto cookie sheets. Drop batter by heaping tbsps, 2 inches apart onto cookie sheets. Bake for 18 minutes or until golden brown.
