Ingredients

  • 1 tbsp canola oil
  • 1 lb turkey kielbasa,sliced
  • 1 small chopped onion
  • 2 lg garlic cloves,minced
  • 1/8 tsp red pepper flakes
  • 2 14.5 oz cans fat-free chicken broth
  • 2 cups water
  • 1 lg carrot,peeled,sliced
  • 2/3 cup dry ditalaini pasta
  • 1 15.5 oz can red kidney beans, rinsed,drained
  • 1/2 cup diced, butternut squash
  • 1 tsp dried oregano
  • 1/4 tsp each Salt and freshly ground black pepper
  • 1 bunch spinach,chopped
  • 1 tbsp lemon juice

Cooking Instructions

In lg skillet,add oil. cook kielbasa until no longer pink. set aside. Spray a lg dutch oven w/ cooking spray, place over med heat. Add onion,saute until tender. Add garlic and red pepper flakes, cook 1 min more. Add broth,water,carrot & pasta,bring to boil. Reduce heat,cover,simmer for 30 min. Add cooked kielbasa,beans,squash and oregano,simmer for 20 min. Add salt & pepper. Add spinach,simmer until spinach wilts. Add lemon juice. Remove from heat and serve.

Recipe Notes

This is a healthy thick stew-like soup for those cold nights coming sooner than we'd like to think.
