Sherry's Brasilia fruit salad.

Ingredients

  • 2 lg thinly sliced red apples, peel on
  • 1 cup peeled orange wedges
  • 1 lg sliced banana
  • 1 1/2 cups seedless grapes. a mix of red and green
  • 1 tbsp chopped cilantro
  • 1/3 cup fresh O.J., no pulp
  • 1 tsp sugar
  • 1/8 tsp salt
  • 1 cup nonfat plain yogurt
  • 1 tbsp light mayonnaise
  • 1 tsp hot pepper sauce
  • 1/2 cup chopped Brazil nuts.
  • 1 lg head of Romaine lettuce

Cooking Instructions

Combine the apples and orange wedges, banana slices and grapes in a small bowl. Sprinkle w/ cilantro. Combine the O.J., suagr and salt. Pour over fruit right away,[ the O.J. keeps the fruit from browning.] Stir to coat all fruit, cover, chill for 30 minutes.

While the fruit chills make the dressing: combine the yogurt, mayonnaise, and hot pepper sauce. Mix well, but don't whip it. Drain the fruit mix. Lightly toss w/ dressing. Line plates w/ lettuce leaves and spoon fruit and dressing onto lettuce. Or spoon fruit onto lettuce and top w/ dressing. Sprinkle w/ nuts right before serving so they keep their crunch.

Recipe Notes

This is a very delicate salad w/ hints of orange and the crunch of nuts that taste full and robust. Lo-cal and lo-fat, it's perfect as a meal or as a side salad. It's best served very cold.
