Sherry's cheese-filled salisbury ..

Ingredients

  • 1 lb ground lean turkey breast
  • 1/4 cup crushed, unsalted tops from saltine crackers, [about 8 crackers.]
  • 1 tbsp worcestershire sauce
  • 1/4 tsp black pepper
  • 4 sticks lo-fat, mozzarella, or swiss, or cheddar cheese
  • 1 1/2 oz can lo-salt beef broth
  • 1/2 12 oz can broth water/ from can
  • 1 lg sliced onion
  • 1 tbsp cornstarch
  • 1 small red pepper, cut into rings, for garnish

Cooking Instructions

In lg bowl, mix thoroughly, but gently, the ground turkey, crumbs, worcestershire sauce, and the pepper. Shape into 4 oblong patties. Make a small dent in each patty, right down the middle.Enclose a cheese stick in the indentation of each patty, covering cheese with meat patty completely and tightly. Brown patties in a little butter in pan. In a 10-inch skillet, bring broth and water to boil, add patties. Surround w/ onions. Cover. Simmer over low heat for 20 minutes. Remove patties. Blend cornstarch w/ a little bit of water. Stir into skillet. Cook mix, stirring until thickened. Add patties and continue to heat on low for a few minutes. Garnish w/ red pepper rings before serving.

Recipe Notes

Children especially like this dish because of the surprise filling. Serve w/ mashed potaoes and they'll love you for life.
