Ingredients

  • 1-1/2 cups organic salsa
  • 2/3 cup organic honey
  • 1/2 cup reduced sugar orange juice
  • 1/2 cup lo-sodium soy sauce
  • 1/4 cup dijon-style mustard
  • 4 tsp canola oil
  • 1/2 tsp ground ginger
  • 6 lg boneless,skinless chicken breast halves
  • 1-1/2 tsp corn starch
  • 2 tbsp cold water

Cooking Instructions

in lg bowl, combine first seven ingredients. Pour 1-1/2 cups into lg resealable bag,add chicken,seal bag,turn over to coat. Refrigerate for 2 hrs. Cover the remaining marinade and refrigerate. Drain,discard marinade from chicken. Spray a lg casserole dish w/ cooking spray, place chicken in dish,top w/ reserved marinade. Bake in preheated 375 oven. for 20-25 min or until juices run clear. Remove chicken,keep warm. In small saucepan, combine cornstarch and cold water, stir until smooth. Stir in pan juices from chicken. Bring to boil. Cook and stir for 2 min. or until thickened. Pour over chicken.

Recipe Notes

My husband loves the sweet-spicy flavor of this sauce. And this dish goes well w/ either rice or pasta or serve alongside a salad made w/ avacado slices and a sweet-spicy dressing.
