Ingredients

  • 1/3 cup canola/olive oil blend
  • 2/3 cup sugar
  • 1/4 cup Egg Beaters
  • 2 tsp vanilla
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 1 1/2 cups uncooked quick oats
  • 1/2 cup mini, semisweet chocolate chips
  • 1/2 cup dried cherries

Cooking Instructions

Preheat oven to 325. Lay down parchment paper on several cookie sheets, spray w/ cooking spray. Combine oil,sugar,Egg Beaters and vanilla in lg bowl. W/ mixer,beat on med speed until well blended. Add flour,baking soda,cinnamon and salt, beat until smooth. Stir in oats,chocolate chips and cherries by hand. Place slightly rounded tsps of dough on cookie sheets about 2 inches apart. Bake 7 minutes. Cookies won't look done. Remove from oven, let cool completely.

Recipe Notes

I love the combination of tastes of the chocolate and the cherries, but you can raisins or cranberries instead.
