Sherry's chocolate-banana cake

Ingredients

  • 1/2 cup crisco shortening
  • 1 1/2 cups sugar
  • 2 lg eggs
  • 1 tsp vanilla extract
  • 1/4 cup dutch-process cocoa
  • 2 cups sifted cake flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups bananas, mashed w/ fork
  • 6 tbsp soft butter, for frosting
  • 1 cup sifted powdered sugar, for frosting
  • 1 cup mashed banana,. for frosting
  • 2 2/3 cup powdered sugar, for frosting
  • 1/2 tsp banana extract, for frosting

Cooking Instructions

Preheat oven to 375. Cream shortening and sugar until light. Beat in eggs, one at a time. Blend in vanilla. Mix cocoa w/ 1/4 cup hot water, blend into creamed mix.sift together flour,soda, and salt. Add dry ingredients alternately w/ mashed banana to creamed mix. Turn into 2 greased 8-inch square pans, lined on bottom w/ wax paper. Bake for 35 min. Cool. Turn out of pans. Cool completely. Fill and frost: Cream together soft butter w/ 1 cup powder sugar, beat 6 tbsp of this mix into 1 cup mashed banana. Gradually add 2 2/3 cups powdered sugar until spreading consistency. Add banana extract, mix well. Frost cake. Cut into squares to serve.

Recipe Notes

To each serving I grate a little dark chocolate on top of the frosted cake and add 1 small slice of fresh banana.
