Grease skillet w/ 1 tbsp butter.
Add garlic, cook until brown.
Add chops. Brown on both sides.
Sprinkle chops w/ salt. spread generously w/ mustard,then sprinkle w/sage and pepper. Repeat on other sides.Add 1/2 cup cider or juice to pan. cover and cook slowly for about 20 min.
Uncover. Add remaining cider. Cook rapidly until reduced to a sauce. Stir 1 tbsp mustard into sauce. Pour over chops.
I love to serve these w/ applesauce or sherried apples: Cut apples in sixths,core,don't peel. In deep bowl mix 1 tbsp lemon juice w/ 1/4 cup each, sherry and packed brown sugar. pour over apples let stand for 30 min.Drain. Roll cut sides of apples
