Sherry's crispy oven-fried catfis..

Ingredients

  • 1/2 cup vegetable Egg Beaters
  • 2 tsp Creaole seasoning blend
  • 1-1/2 cups panko breadcrumbs
  • 3 tbsp chopped fresh parsley
  • 4 lb catfish fillets,rinsed,patted dry

Cooking Instructions

Preheat oven to 425. In med bowl, combine Egg Beaters and 1 tsp creole seasonongs, blend,using a fork. Set aside. In lg plate,combine panko breadcrumbs,parsley and remaining creole seasoning until well blebded. Sprinkle 1/4 tsp each of salt and pepper.. Dip each fillet in egg mix, turn to caot evenly. Place fillets in breadcrumb mix,turn to coat evenly. Spray a broiler pan w/ cooking spray. Place fillets on prepared pan. Bake 15 min, or until fish flakes easily with a fork and is golden brown. Arrange fillets on platter,sprinkle w/ parsley.

Recipe Notes

These are definitely a little spicy,so I serve them with a mild coleslaw or simple salad.
