Sherry's fresh strawberry bars

Ingredients

  • 3/4 cup "I can't believe it's not butter",softened
  • 3/4 cup lo-fat peanut butter
  • 1 cup packed brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 lg eggs
  • 1 tsp vanilla extract
  • 2-1/4 cups all purpose flour
  • 1/2 cup lo-sugar strawberry jam
  • 4 cups small whole strawberries,halved

Cooking Instructions

Heat oven to 350. Line a 13x9x2-inch baking pan w/ foil,going beyond edges,spray w/ cooking spray,set aside. In lg bowl, beat butter and peanut butter on med-high for 30 sec. Beat in sugars,baking powder and salt until combined. Add eggs & vanilla,beat until combined. Beat in as much of the flour as you can,stir in the rest. Spread dough in pan. Bake 25 min or until top is lightly browned. Cool completely. Remove from pan by lifting foil. Spread jam & then top w/ berries,cut into bars.

Recipe Notes

These are delicous,especially during the summer months,but great any other time w/ frozen,thawed berries.
