Sherry's Indonesian-style pasta

Ingredients

  • 1/2 cup fat-free chicken broth
  • 1/2 6 oz jar jalapeno peppers,seeded,chopped
  • 2 tbsp light soy sauce
  • 2 tbsp light creamy peanut butter
  • 1 tbsp minced onion
  • 1 tbsp lemon juice
  • 1/4 tsp brown sugar
  • 18 fresh asparagus spears,trimmed,cut into 1-inch pieces
  • 1/2 lg sweet red pepper,julienned
  • 2 tsp canola oil
  • 6 ounces uncooked angel hair pasta
  • 1/2 cup sliced green onions

Cooking Instructions

In small saucepan, combine 1st 7 ingredients. Bring to boil,stirring constantly. Remove from heat,keep warm. In lg skillet, saute asparagus and red peppers in oil for 6-8 min. Cook pasta. Add green onions to asparagus mix,saute for 2-3 min. Drain pasta when done, toss w/ veggie mix and reserved sauce.

This is a fairly quick, but deliciously different pasta dish.
