Ingredients

  • 1/3 cup all-purpose flour
  • 1 tsp each Salt and freshly ground black pepper
  • 3 lbs broiler/fryer chicken,cut into eighths
  • 1/4 cup canola/olive oil mix
  • 3 cloves crushed garlic
  • 1/2 lb hot Italian style turkey sauage
  • 1/2 lb sweet Italian style turkey sausage
  • 1 lb small whit onions, peeled
  • 3 lg sweet red pepper,cored,seeded,cut into strips
  • 3 lg sweet green pepper,cored,seeded, cut into strips
  • 1 lb yellow squash,cut into chunks
  • 1 lb zucchini,cut into chunks
  • 1 pound mushrooms,quartered
  • 1 can,2 pounds Italian plum tomatoes
  • 2 lg bay leaves
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 1 cup chicken broth
  • 1/2 cup orzo,[rice shaped pasta]

Cooking Instructions

Combine the flour,salt & pepper in a plastic bag. add chicken. Toss well until coated. Heat oil in lg heavy pan. Brown chicken, a few pieces at a time on all sides. Add garlic,sausages, and onions. cook,removing pieces as they brown. Add peppers,squash,zucchini and mushrooms to the pan. Cook until browned. Return the chicken, garlic,sauages, & onions to the pan. Add tomatoes,bay leaf and dried herbs. Add broth, stir to mix well. Bring to a boil, cover and simmer for 1 hr, or until the chicken is almost tender. Stir in orzo, cover and simmer for 15 min. Serve.

Recipe Notes

I wanted a filling Italian dish that wasn't too hard to make and came up with this. And the fat &caloric amount isn't as high when you turkey sausages instead of regular pork sausages. CAL: 527 FAT: 23 g
