Sherry's Italian wedding soup.

Ingredients

  • 2 1/4 cup each servings of Egg Beaters
  • 1/2 cup Italian bread crumbs
  • 1 lb lean ground turkey
  • 1 lb bulk Turkey Italian sausage
  • 3 med sliced carrots
  • 3 med celery ribs,diced
  • 1 lg onion,chopped
  • 3 lg minced garlic cloves
  • 4 12/ tsp olive/canola oil mix
  • 4 14 1/2 oz each can fat free chicken broth
  • 2 14 1/2 oz each can fat free beef broth
  • 1 10 oz pkg frozen chopped spinach,thawed,squeezed dry
  • 1/4 cup fresh minced basil
  • 1 small envelope,onion soup mix
  • 4 1/2 tsp ketchup
  • 1/2 tsp dried Italian herbs
  • 1 1/2 cups penne pasta,uncooked

Cooking Instructions

In bowl,combine Egg Beaters and bread crumbs. Crumble turkey and turkey sausage over mix. Shape into small 3/4-inch balls. Spray w/ cooking spray a baking pan. Place meatballs onto pan,bake at 350 for 18 min or until no longer pink. In lg soup kettle or pot,saute carrots,celery,onion,and garlic in oil until tender. Stir in the broths,spinach,basil,soup mix,ketchup and Italian herbs.

Drain meatballs on paper towels. bring soup to boil, add meatballs. Reduce heat. Simmer,uncovered for 30 min. Add pasta,cook 15 more min. Stirring occasionally.
