Ingredients

  • 1 16 oz pkg sliced mushrooms
  • 3/4 cup sliced scallions
  • 8 lg servings of Egg Beaters
  • 2 cups chopped fresh baby spinach
  • 1 cup shredded reduced-fat swiss cheese
  • 1/4 tsp Salt and freshly ground black pepper
  • 1/4 cup chopped tomato
  • 1/4 cup chopped parsley
  • 1 tbsp canola oil

Cooking Instructions

Turn on broiler. Heat a tbsp oil in non-stick skillet,add veggies. Saute 5 min or until almost tender. Whisk Egg Beaters w/ spinach.swiss cheese, salt & pepper. Pour into skillet, distribute evenly in pan. Cover,cook w/out stirring for 4 min over med-low heat, until set on bottom and sides,( it may still be runny in middle.) Wrap skillet handle w/ foil, broil 2 min or until center is firm. Loosen edges,invert onto platter.

Recipe Notes

Delicious brunch or quick dinner item. Lo-fat, yet doesn't taste it.
