In colander set over bowl,toss zucchini w/ 2 tbsp suagr,let drain 30 min. Squeeze dry. Preheat oven to 350. Coat a 8 1/2-inx4 1/2-in loaf pan w/ cooking spray.Sprinkle w/ flour. Spread walnuts on jelly roll pan,bake until toasted,about 5 min. Cool,reserve 1 tbsp walnuts,coarsely chopping the remaining walnuts. Mix the flours,baking soda, powder,salt and chopped walnuts. In separate bowl,whisk milk,Egg Beaters,butter,vanilla and 1 cup sugar.Stir sugar mix into flour mix. Stir in zucchini. Pour into pan. Bake for 45-50min, or until toothpick inserted in center comes out clean. Cool 15 min. Remove from pan,cool completely. Stir 2-3 tsp water into confectioners' sugar until thick glaze forms,pour over loaf,sprinkle w/ walnuts.
