Ingredients

  • 1 8 oz. pkg fat free cream cheese
  • 1 5.2 oz pkg garlic and herb cheese spread, room temp.
  • 1/2 tsp Salt and freshly ground black pepper
  • 3/4 cup 1% milk
  • 1 1/2 tsp grated lemon zest
  • 2 10 oz.pkgs each frozen,thawed spinach, squeezed dry.
  • 2 lg chopped scallions
  • 1 14 oz can water chestnuts,chopped
  • 3/4 cup grated parmesan cheese
  • 1/4 cup slivered scallions

Cooking Instructions

On med-high speed, beat first 4 ingredients until well blended, for 2 min. Reduce speed to med. Gradually beat in milk until smooth. Stir in zest,spinach,chopped scallions and water chestnuts, add parmesan cheese. Cover and refrigerate for up to 8 hours. Spoon mixture into lg serving bowl, top w/ slivered scallions. Serve w/ vegetables.

Recipe Notes

This is a great lo-fat dip for veggies and pita bread.
