Ingredients

  • 2 lg eggs
  • 1 1/4 cup serving EggBeaters
  • 1 1/2 cups sugar
  • 1 cup canola oil
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts or pecans, optional
  • 4 cups pared,thinly sliced lg apples
  • 2 3 oz pkgs light cream cheese
  • 1/4 cup melted "I can't believe it's not butter
  • 1 3/4 cups powdered sugar
  • 1 tbsp lemon juice

Cooking Instructions

Preheat oven to 350. I lg. bowl, beat eggs and eggbeaters on high speed until thick & light. Mix suager and oil, beat into eggs.Stir together, flours,cinnamon,baking soda, add to egg mix. add vaniila. Stir in nuts. W/ cooking spray, spray a 13-by-9-by-2-inch baking dish. Spread apples into dish evenly, pour batter over apples, spreading to cover. Bake for 1 hr. or until top is pale golden and apples are cooked . Remove from oven and cool. FROST: beat cream cheese until fluffy, beat in melted butter, add powdered sugar and lemon juice. Frost cake. Serve cake slightly warm.

Recipe Notes

This is a cake I make every fall, because it's perfect for it w/ the fresh apples. But I also make it any other time, just because it's so good.
