Sherry's mussels in tomato sauce

Ingredients

  • 1 lb fresh lg mussels
  • 2 tsp canola or olive oil
  • 1 cup onion chopped
  • 4 lg cloves garlic,minced
  • 2 14 1/2 oz cans whole tomatoes,drained,chopped
  • 1 cup seafood or chicken broth
  • 1/2 cup chopped fresh basil
  • 1/4 tsp black pepper
  • 12 lg, thick slices French baguette bread

Cooking Instructions

Scrub all mussels of grime, discard any open cracked mussels. Heat in oil in lg pan over med-high heat until hot. Add onion and garlic. Saute until tender. Add tomatoes and broth. Bring to boil. Add mussels, basil and pepper. Cover,reduce heat to med-low,simmer for 10 minutes or until mussels open. Discard unopened mussels.Spoon mussels w/ tomato mix into bowls, serve w/ bread.

Recipe Notes

You can also serve these mussels w/ tomato over linguini.
