Ingredients

  • 1/2 cup "I can't believe it's not butter", softened
  • 1 cup sugar
  • 2 lg eggs
  • 1/2 tsp vanilla extract
  • 1-1/4 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup mashed ripe bananas
  • 1/2 cup chopped pecans
  • 1/2 cup "I can't believe it's not butter",softened
  • 1/4 cup 1% milk
  • 1 tsp vanilla extract
  • 2-1/2 cups confectioners sugar
  • 1 cup finely chopped pecans

Cooking Instructions

Preheat oven to 350. Spray a 8-inch square baking pan w/ cooking spray. In a lg bowl, cream butter and sugar. Add eggs, one at a time. Stir in vanilla. Combine the flour,baking soda and salt. Add to creamed mix. Beat just until combined. Fold in banana and pecans. Pour into baking dish. Bake for 30-35 min. Cool. In small bowl, cream butter. Beat in the milk,vanilla and enough confectioner's sugar to get spreading consistency. Stir in finely chopped pecans. Frost cooled cake.

This is a great "coffee" dessert.
