Preheat ove to 375. Beat together, oil,sugar,& eggs until blended. In lg bowl, sift together flour, baking soda,salt,cinnamon,and cloves.
Add to egg mix. mix well. Drain the pineapple well. Add carrots,walnuts and pineapple to mix, mix well.Pour the batter into a 9 -inch cake pan or a lg bundt pan. Bake for about 1 hour or until a toothpick inserted in center comes out clean. Let cake cool on rack. Make frosting: Cream together 2 pkgs cream cheese,powdered sugar, & vanilla. Blending well. Split cake into 2 layers if using the 9 -inch pan. Cover both halves w/ frosting, making sure it's covered completely. Sprinkle generously w/ coconut. Serve.
This cake takes work to make and is very rich, very fattening. But once in awhile it's well worth it! Believe me, there's nothing like an old-fashion made carrot cake. It's one of the most asked for desserts in America.
