Sherry's oven-fried crunchiest cr..

Ingredients

  • 6 cups toasted rice cereal
  • 1/2 cup all-purpose flour
  • 2 tbsp dried Italian seasoning
  • 1 1/2 tsp lo-sodium salt
  • 1 tsp cayenne pepper
  • 4 lbs chicken pieces, thighs, legs, etc.
  • 1/2 cup light creamy Italian salad dressing
  • 2 sprigs parsley, for garnish

Cooking Instructions

preheat oven to 400. Position racks in upper and lower thirds of oven. Line 2 lg jelly roll pans w/ foil. Place a rack in each pan,coat w/ cooking spray. In plastic "ziplock" bag, crush cereal until fine crumbs form. Add flour,seasoning,salt and cayenne pepper. shake well. In lg bowl, mix chicken pieces w/ dressing,turning to coat.Add chicken to crumb mix, 1 piece at a time, toss to coat, place on rack. Roast for 45 minutes. switch pans between upper & lower racks half way through cooking time. Garnish w/ parsley sprigs.

Recipe Notes

This is an extra-crunchy "fried" chicken, thanks to the rice cereal. The dressing gives it a nice bite.
