Ingredients

  • 1 9-inch refrigerated pie crust
  • 1-1/3 cups all-purpose flour
  • 1/2 cup all-purpose flour
  • 1-2/3 cup light brown sugar
  • 1/2 cup chopped pecans
  • 1/4 cup sugar-free peach preserves
  • 1 tsp vanilla extract
  • 1/2 cup "I can't believe it's not butter",melted
  • 9 lg fresh peaches,pitted,cut into 1/4"-thick slices
  • 1-1/3 cups[6 0z] blackberries
  • 1/4 cup confectioners sugar

Cooking Instructions

Preheat oven to 350. Place lg cookie sheet in oven on lower rack. Spray a 9" pie pan w/ cooking spray. Unroll dough and fit into pie pan. In sm bowl combine, 1-1/3 cups flour,2/3 cup brown sugar and pecans.stir in butter until crumbs form. Reserve. in lg bowl combine, remaining 1/2 cup flour and 1 cup brown sugar.Add peaches,blackberries,preserves and vanilla. Mix until brown sugar dissolves. Spoon fruit mix into crust. Top evenly w/ crumb mix. Put pie pan onto hot cookie sheet. and bake for 2 hrs and 25 min, or until fruit is tender and bubbly and center is set.. Cover w/ foil after 45 min, if pie is browning too fast. Cool on rack,sprinkle w/ confectioners' sugar.

Recipe Notes

This pie is bursting w/ fruit flavor so much that you'll want more than 1 piece.
