Ingredients

  • 1 lb frozen sliced peaches,thawed,drained
  • 3/4 cup 1% milk
  • 2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup "I can't believe it's not butter" baking sticks,room temp
  • 1-1/2 cups sugar
  • 3 lg egg whites
  • 1 lg egg
  • 1 tsp vanilla extract
  • 2 cups frozen light whip cream,thawed
  • 1/2 cup peach slices for garnish

Cooking Instructions

Preheat oven to 350. Spray w/ cooking spray 18 muffin cups, or line w/ liners. In blender,puree 2/3 cups peaches w/ 1/2 milk until smooth. Blend in remaining 1/4 cup milk.Reserve. Chop remaining 1 cup peaches,drain on paper towels,reserve. Combine, flours,baking powder and salt.reserve. On medium speed w/ mixer, beat butter w/ sugar until blended. On low speed beat in egg whites,egg,vanilla and peach puree until blended. Gradually beat in flour mix until smooth. Stir in chopped peaches.Divide among liners. Bake 25 min or until a toothpick inserted in center of muffin comes out clean. Take muffins from pan,cool completely. Spread w/ whipped cream. Garnish w/ peach slices.
