Ingredients

  • 2 tbsp canola oil,divded
  • 1/3 cup celery,finely chopped
  • 1/2 cup onion,finely chopped
  • 1 cup fresh mushrooms,chopped
  • 1/2 cup dried cherries,chopped
  • 1/2 tsp dried thyme
  • 1/4 tsp each salt and pepper
  • 4 lg pork loin chops. 1 inch thick
  • 1 tsp all-purpose flour
  • 1/2 cup chicken broth
  • 1/2 cup cherry juice

Cooking Instructions

In a lg skillet,heat 1 tbsp oil over medium-high heat. Add celery,onion and mushrooms. Cook,stir for 4 min. Stir in cherries,thyme,salt and pepper. Remove from heat. Cut deep pocket of each chop. Fill w/1/4 of cherry mix. Close w/ toothpicks.Reduce heat to medium. Add remaining 1 tbsp oil. Add chops. Brown 8 minutes each side, or until no longer pink Remove chops from skillet. Pour off fat. Add flour to skillet, cook,stir 30 seconds. Stir in chicken broth & juice. Scrape up brown bits. Cook 1 minute to thicken sauce. Return sauce to pan. Turn to coat evenly. Spoon remaining sauce over pork. Serve..
