Ingredients

  • 1-1/2 cups sugar
  • 1 15 oz can solid-pack pumpkin
  • 1 cup canola oil
  • 3 lg eggs
  • 1/4 cup Egg Beaters
  • 1-1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cloves
  • 2 3 oz pkgs each light cream cheese,softened
  • 1/2 cup "I can't believe it's not butter", softened
  • 2 tsp vanilla extract
  • 4-1/2 cups confectioners sugar
  • 24 small candy pumpkins

Cooking Instructions

Preheat oven to 350. Spray a 15-inch x 10-inch x 1-inch baking sheet w/ cooking spray. In lg bowl, beat sugar,pumpkin,oil,eggs,egg beaters. In another bowl,combine flour,baking powder,cinnamon baking soda,salt and cloves. Gradually add to pumpkin mix and mix well. Pour into baking sheet. Bake for 20-25 min or until toothpick inserted in center comes out clean. Cool . For frosting, in bowl, beat cream cheese,butter and vanilla until smooth. Gradually add confectioners' sugar. Spread over cake. Garnish w/ candy pumpkins.
