Sherry's raisin applesauce biscui..

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup [1 stick, ] butter
  • 1/2 cup raisins
  • 1/2 cup unsweetened applsauce
  • 1/4 cup lite sour cream
  • 2 tsp cinnamon sugar
  • 1/2 cup powdered sugar
  • 3 tsp hot ready-made coffee

Cooking Instructions

In lg. mixing bowl,combine flours,baking powder,baking soda. Blend. With fork, blend in butter until pea-sized pieces form. Add raisins to flour mix. Stir applesauce and sour cream together, blend into flour mix, until dough holds together in a ball. Sprinkle w/ cinnamon sugar.

Knead 1 or 2 times, just until cinnamon is streaked through the dough. Turn dough onto lightly floured board. Pat or roll out to 1/2 in. thickness. Cut into 2-in. rounds. Place on ungreased baking sheet covered with parchment paper. Bake at 400 for 15 minutes or until biscuits are lightly browned. Mix together powdered sugar w/ just enough hot coffee to make a glaze. Drizzle over hot biscuits.

Recipe Notes

Wonderful served w/ fresh fruit and cheese.
